After the selection has been made, Don Raymundo removes all spears, leaving only the sweet core, the piña, to be used.

COOKING

Don Raymundo then places the piñas into a traditional steam oven, releasing their unique sugars and juices into a purity he could have never imagined.

MILLING

To acquire this purity, Don Raymundo made sure to only use the finest juices; leaving all the must behind.

FERMENTATION

Once acquired, Don Raymundo then places all the juices, yeast, and finest water he can find into giant tanks for nearly to twenty days.

DISTILLATION

To produce the finest blanco Tequila known to man, Don Raymundo makes sure his Tequila is distilled dos veces (two times).

Don Raymundo grew up a butcher’s son in the heart of Jalisco, Mexico. As a young boy he became obsessed with agave azul, blue agave. He began to study the agave flowers. The seed had been planted.
